What is Hard-Anodized Aluminum Cookware?

Aluminum isn't a great metal for cookware, though it is an excellent heat conductor. Hard anodizing, however, is a process that turns the aluminum into a nonstick-like surface, altering the functionality and appearance of the metal. 

The treatment creates both that nonstick property and makes for a scratch-resistant, durable pan. Though it won't likely last forever (it is still a coating), hard-anodized aluminum tends to hold up much longer than traditional nonstick pans. 

The treatment of the aluminum also means that it's non-reactive, so you can use it for acidic ingredients without worry. 

Why Do I Need a Hard-Anodized Pan?

Not everyone does, but many cooks like having a nonstick pan around for certain foods. Stainless steel makes for excellent, durable, and versatile cookware, but it can be tricky to cook on. What Can I Expect from a Hard-Anodized Skillet?

First and foremost, don't expect it to feel like any nonstick pan you've had in the past. Hard-anodized aluminum cookware is heavier and tougher than Teflon pans of the past. Most pieces, including our pan, are heavy and can stand up to a lot.

Despite the differences in heft and durability, you can expect your skillet to perform as well as or better than other nonstick. Traditional nonstick tends to deteriorate over time, but those first few uses are usually pretty great: Nothing sticks and it's easy to clean. That's something you can count on with your hard anodized pan for a long period of time.
